I honestly cannot remember if I have already posted about these..... but... if I have, sorryboutcha. You're getting it again. Why? Because these are some of the best cookies/fall treats EVER.
The combo of pumpkin, oatmeal, and chocolate chips in a soft, moist cookie is absolutely delicious, and who doesn't want some other pumpkin goodie to munch on this fall?
Here's what you'll need:
- 2 cups flour
- 1 cup oatmeal
- 2 tsp cinnamon
- 1 tsp baking soda
- 1 tsp salt
- 1 cup butter
- 1 cup packed brown sugar
- 1 cup granulated sugar
- 1 egg
- 1 tsp vanilla
- 16 oz pumpkin
- 1 cup chocolate chips
Combine all ingredients with a mixer. Drop teaspoon-full sized amounts onto cookie sheet, about 2 inches apart each. Bake at 350 for 12-15 minutes.
Boom. Done.
Maybe you can make them this weekend, since it's finally FRIDAY.
The day that I get a mini vacation from Decatur with my man. The day I get to see Jordan again (as always, it's been too long). The day I get to be in the city again for the weekend and just enjoy it and perhaps (if the fiancé is feeling super nice) try and scout out some wedding shoes :) The search must begin now!
