Unlike myself, Nick is not a huge sweet-tooth. He doesn't really like cake (I know, right??? What is that?) and pie is more up his alley. However, there is one type of cake that he does love quite a bit..... cheesecake.
Since it's finally fall and it is more appropriate to be baking pumpkin goodies now (I'm sorry, I couldn't resist making that cake!), I decided I would make the pumpkin cheesecake he has been requesting. I would have done it sooner, but I still didn't have a spring-form pan. Seriously, what kind of baker am I that I just now got a spring-form pan? Anywho, I used Paula Deen's recipe for pumpkin cheesecake that we made while I was visiting him in Texas over Thanksgiving. We were looking a recipe up and chose Paula Deen because, well, everything she makes is delicious and über fattening, duh.
And it is good. It was ready right when Nick got home from work the other night so I didn't really take the time to take any pictures of the finished product before we tore into it. I did take this picture this morning, however, to give you an idea of how good it is:
Yeah, that is more than half a cheesecake. Gone. I made this cheesecake Monday evening. It is now Thursday morning. Buncha fatties ova here!!! I finally got around to making homemade whipped cream last night with the rest of the heavy whipping cream I had in the fridge from a previous recipe, but now we have a little too much considering how much of the cheesecake is left... oh well, just an excuse to make another treat, right? (I had to bake this pie, I needed to use my whipped cream!)
I think once this cake is gone, I've gotta stop for a bit... except we have friends coming next week, and I need to make some kind of fall goodies! But at least then Nick and I won't be the only ones eating said goodies ;) OK, time for a run now...
One more thing. If you want the recipe for homemade whipped cream it is probably the easiest thing you'll ever make. Ever. Just grab a pint of heavy whipping cream, put it in a bowl (if the bowl is chilled it will go faster), add a teaspoon of vanilla, and a few Tablespoons of powdered sugar. I just guessed and tasted it to my preferred sweetness. All that's left is turning on your mixer or hand-mixer to high and whipping it til it starts to get clumpy! Voila! A bowl of fattiness to put on ice cream, cake, pie, cheesecake, hot chocolate, your coffee, maybe a sandwich for lunch.... haha just kidding. But it's that good and homemade you'll want any excuse to use it. Just warning you.
