Breakfast Tacos.



I am so so so SO happy that Nick is back! Especially since we can cook together! And let me tell you, this man can cook.

While he was living in Texas, he was introduced to something called a breakfast taco. Apparently it's all the rage there. And with good reason.

A breakfast taco is basically a taco that you eat for breakfast (duh) except it has eggs in it instead of meat, though you could make one with meat if you wanted. We made ours with eggs, sour cream, cheese, black beans, and hot sauce. You can use just regular taco shells, but I highly recommend buying corn tortillas and frying them into your own homemade hard shells. So. Good.

To make this delicious breakfast, start by frying your corn tortillas on either side with canola oil in a pan over medium-high heat.


You will need something to bend them with once they are fried, then let them cool and harden into shape on a plate. 


While your tortillas are frying, cook your eggs. You can do them in a pan on the stove, but we just microwaved four eggs for a few minutes and cut them up so they were scrambled.

 Once your shells are cooked and your eggs are scrambled, you're ready to assemble! Here we have our black beans, cheese, sour cream, and hot sauce. I looooooove me some hot sauce, so I put on a lot!

After you've assembled your tacos, all there's left to do is eat them!
